My favorite autumn fruit are oranges. Oranges go well with chocolate, so there is no better way to combine them. Try this yummy choco orange muffins. The best fact is they are actually low in carbs and contain only 2,6 grams of sugar per serving, what makes them suitable for low carb and keto diets.
Chocawesome orange muffins
- 50 grams almond flour
- 20 grams coconut flour
- 2/3 cup water
- 2 tsp. baking powder
- 2 tbs. melted butter
- 1/2 cup erytrol
- 2 tbs. fresh orange juice
- orange zest
- 25 grams dark chocolade chopped
Preheat oven to 375 degrees. (160 Celsius)
Combine dry ingredients and stir well.
Separate the egg whites from the yolks. Using a hand mixer, beat the egg whites until they are firm.
Combine the egg yolks, 1/3 of the beaten egg whites and dry ingredients. Mix until combined. Add water and stir well. Add the remaining of the egg whites and gently mix using a spoon to give your mixure a volume.
Divide mixture into 8 medium muffin molds. Bake for 25 minutes. Check with a toothpick to ensure the muffin is baked through.
